Raspberry - Rhubarb Paleo Pancake

Paleo an eating plan modeled on prehistoric human diets

When you eat Paleo you exclude dairy products , sugar and highly processed foods, legumes and grains.

I try to stick to paleo as much as I can because of the benefits like

  • weight loss

  • better blood sugar balance

  • better blood pressure control

  • lower blood fats

It is a “Raspberry pancake” from the beginning but I decided to ad Rhubarb from my garden because it is the season right now and I love Rhubarb. Since Rhubarb is pretty acid I decided to also ad Tigernut flour (Erdmandelmehl) to make it a little bit sweater.

This cake has no grains, no sugar and no dairy!

Directions

RASPBERRY PANCAKE WITH RHUBARB ( 2-4 persons )

6 Eggs

1 Banana

100 ml Tigernut flour

 1 large tbsp Coconut oil

1 tsp ground cardamom

1 pinch of sea salt

CAKE’S TOPPING

200 ml half-frozen raspberries

200ml Rhubarb (cut in pieces and boiled in 2 table spoons water for 5 minutes)

50 ml chopped almonds on the top

1.              Preheat the oven to 200 degrees

2.              Crack the eggs in a bowl

3.              Add the banana

4.              Add ground cardamom and sea salt

5.              Add Tigernut flour

6. Click down the coconut oil

7.              Run with hand blender until mixed well

8.              Pour into an ovenproof dish

9.              Put the raspberries and Rhubarb over the pancake

10.            Sprinkle with chopped almonds

11.           Bake in the oven for 20-30 minutes
