Probiotic Water Kefir
PINK GRAPEFRUIT JUICE, POMEGRANATE/CHILI, LEMON/CLOVES/ZIMT, LINGONBERRIES/LEMON, ORANGE/CLOVES
PROBIOTIC KEFIR WATER
1 liter
INGREDIENTS:
1 litre tap water or coconut water
50 gram unrefined sugar
1 Medjol date, pitted
20-30 g activated kefir grains ( order on internet or get some from me)

DIRECTIONS:
First fermentation
Combine water and sugar in a 1,5 litre jar, shake until sugar is dissolved.
Add remaining ingredients, cover with muslin and secure, you can also use a lid but don´t put it tight.
Place jar out of direct sun light and ferment for 48 hours. Water will become cloudy, slightly effervesent and sweet when ready.
Strain kefir into a jar or bottle and use grains to start a new fermentation.
Second fermentation
Before you start the second fermentation you can ad any flavour, use fruits, herbs, vegetables as you wish.
Leave bottle at room temperature with tight-fitting lid for 1-2 days or until carbonated, you can open the lid once a day to “burp” the kefir.
A finished probiotic drink can be stored in the refrigerator for 2-3 weeks.
