Salad • Avocado • Fat

Veggies, greens, and oils, and seasonal and regional are my main foods today. 

I don’t eat strawberries in November or asparagus in January.  

This is a summer salad with local asparagus, lilac carrots, and avocado. Avocado is not local, unfortunately. However, it is a very good source of fat and other important nutrients, and therefore sometimes I add it to my salads.  I always buy organic avocados and eat with gratefulness. 

Due to avocado popularity, more farmers are growing them in larger numbers. This is causing water shortages and deforestation in those regions, unfortunately.  

Along with avocados, good oils are also a great source of fat. I always use organic olive oil in my salads. I never use canola, sunflower, or corn oils which are too high in Omega 6.  Too much Omega 6 is said to cause inflammation in our body.
